Free-from Almond Muffins

Gluten and dairy free sweet fluffy muffins (with optional blackberries)

300ml full fat coconut milk (from a tin) 2 eggs 4 tbsp honey 1 vanilla pod (scraped) or 1 tsp vanilla paste 300g ground almonds ½ tsp bicarbonate of soda 1 pinch sea salt 100g blackberries or other berries (optional)
Mix the coconut milk, eggs, honey and vanilla in a bowl. Add the remaining ingredients and mix. Pour the mixture into muffin holders (only fill them two thirds full as they will rise) Bake the muffins in the oven for 20 minutes at 180 degrees Celcius until golden on top.

Caramelised Onion Sauce

I use this sauce in stead of tomato sauce on pizza among other things. It’s a great alternative for those who can’t tolerate tomatoes and lectins. But it’s just as great with meats, cheese, sausages, or even just a piece of crispy bread with goat cheese.
